Baked Salmon, Mushrooms and Chunky Potatoes in Foil with Miso and Mayonnaise

I wanted to make another recipe using salmon and potatoes. I thought the potatoes with miso and mayonnaise would be tasty.
Set the grill at the medium heat.

Cooking Instructions

Sprinkle salt and pepper on the salmon fillets. Peel the potatoes and cut into 1-2 cm cubes. Soak in water briefly.

Transfer the cut potatoes to a heat proof dish and add a little water. Cover with cling film and heat in a 600W microwave for about 2.5 minutes.

Slice the onion thinly. Chop the leek. Combine the ★ ingredients and chopped leek well.

Take a long sheet of foil. Place the onion→ salmon→ potatoes at the side of salmon→ enoki mushrooms on top of salmon on the piece of foil (in this order). Pour the combined seasonings.

Seal the foil and grill for 15 to 20 minutes under the grill. (I have a grill which can cook both sides.)

Adjust the amount of seasonings according to the size of the fish fillets. I used one tablespoon of combined seasonings for a big fillet and it tasted a little too light.

Remember that the cooking time differs according to the grill you use at home.
