Ingredients

4 servings
  1. 4 Cspinach leaves (loosely packed)
  2. 2shallots; medium dice
  3. 2 clovegarlic; creamed
  4. 1zucchini; medium dice
  5. 1red bell pepper; medium dice
  6. 1large tomato; seeded & small dice
  7. 1/2 Csweet corn
  8. 2 tfresh rosemary; minced
  9. 1 Tfresh oregano; chiffonade
  10. 1 tfresh thyme; minced
  11. 1/4 bundleparsely; chiffonade
  12. 1/2 Cvegetable stock; warm on stove
  13. 1/2lemon; juiced
  14. 1/4 Cfeta cheese crumbles
  15. 1large pinch kosher salt & black pepper
  16. as neededolive oil;

Steps

  1. 1

    Heat enough oil to cover the bottom a large, tall saute pan. Add zucchini, bell peppers, shallots, rosemary, and thyme with a pinch of salt and pepper.

    Saute for 2 minutes. Add tomato, corn, and garlic. Saute 1 more minute. Do not burn garlic.

  3. 3

    Add spinach and a touch more olive oil. Stir and saute 30 seconds.

  4. 4

    Add vegetable stock. Reduce until dry.

  5. 5

    Add parsley, oregano, and lemon juice. Stir. Adjust seasoning with salt and pepper.
