I often use my ‘Mabo Dofu’ miso sauce for seasoning stir-fried vegetables. I realised that the sauce goes very well with Tomatoes. I knew that Soy Sauce goes well with Tomatoes, but it was a surprise discovery. If you like my ‘Mabo Dofu (Tofu)’ and Tomatoes, this dish might become one of your favourite dishes.

Ingredients

4 servings
  1. 500 gPork Mince
  2. 1 cloveGarlic *finely chopped
  3. 1small piece Ginger *finely chopped
  4. 4Spring Onions *finely chopped, save some for topping
  5. 1 tablespoonOil
  6. 4Eggs *lightly whisked
  7. 1 pinchSalt
  8. 4Tomatoes *cut into chunky pieces
  9. Freshly Cooked Rice 4 servings
  10. <Miso Sauce Ingredients>
  11. 2 tablespoonsDark Colour Miso
  12. 2 tablespoonsSoy Sauce
  13. 2 tablespoonsSugar
  14. 2 tablespoonsSake (Rice Wine) OR Water
  15. 1 tablespoonToban Djan (Chili Bean Sauce)
  16. 1 teaspoonSesame Oil for flavour

Steps

  1. 1

    Place all the sauce ingredients in a bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.

    Lightly whisk Eggs in a separate bowl, and season with a pinch of Salt. Heat Oil in a frying pan over medium-high heat. When the pan is hot, cook Eggs gently stirring until set but still soft. Transfer to a plate.

  3. 3

    Cook Pork Mince with Garlic, Ginger and Spring Onions until Pork changes colour, then add the sauce and combine.

  4. 4

    Add Tomatoes and cook for a few more minutes until Tomatoes started softening. Return the cooked egg and gently combine.

  5. 5

    Half fill a bowl with freshly cooked rice and cover it with the pork and tomato mixture. Sprinkle saved chopped Spring Onion on top and serve.

Haha 😅 I used beef mince, and added actual silken tofu as well, tinned tomatoes instead of fresh, and chilli powder and chilli garlic sauce because I had no chilli bean sauce 🙈 All in all it was only loosely based on your recipe but it turned out tasty!
