It's hot outside, so I made something light and easy for the whole family.

Clean the chicken and cut it into small pieces. Marinate with 2 tablespoons salt, 1 tablespoon fish sauce, and 1/2 tablespoon MSG.

Finely crush the onion, garlic, and turmeric. Heat 2 tablespoons oil in a pot, sauté the mixture, then add the chicken and cook until well coated with the seasonings.

Add water and rock sugar. Simmer over low heat until the chicken is tender. Adjust seasoning to taste, then turn off the heat.

Wash the fresh herbs. For authentic Mi Quang, include banana blossom and young mustard greens. Place noodles in a bowl, top with chicken, and ladle broth over. Add peanuts and rice crackers. For the best flavor, serve with green chili and mix in more fresh herbs with the noodles.
