Place a pot over medium heat with a splash of oil, add the pork to brown, and season with salt. Once the meat is well browned, add the juice of two oranges, the unpeeled and crushed garlic cloves, the halved onion, the bay leaf, a few thyme leaves, cover everything with water, and bring to a boil.

During the first ten minutes of cooking, skim off the foam released by the meat using a spatula. Once the broth is clear, lower the heat and let the carnitas simmer for a couple of hours over low heat until the pork is very tender.

Serve the carnitas in tacos with the salsa and enjoy.
