Who doesn't know supplì? But have you ever tried them baked? They're delicious this way and even lighter. They're perfect as a side for pizza night, as a snack, or really any time you get hungry during the day.
Steps
- 1
For a more flavorful sauce, you can add herbs and aromatics like parsley or garlic if you like. (I kept it very simple for this recipe.)
- 2
Cook the rice in plenty of salted water.
- 3
Drain the rice while it's still slightly firm, let it cool, then gradually mix in all the ingredients: eggs, Parmesan, tomato sauce (a little at a time, to taste), and enough breadcrumbs to keep the mixture soft but not runny, since baking can dry it out.
- 4
Season with salt and add the olive oil.
- 5
Cut the mozzarella into thin strips.
- 6
Take a bit of the mixture in your hands, place some mozzarella in the center, and shape it into elongated balls, like in the photo!
- 7
Quickly roll each in breadcrumbs.
- 8
Bake at 350°F (180°C) for 15-20 minutes.
- 9
Check for doneness and golden color based on your oven and your preference.
- 10
Enjoy!
