When I discovered that my tummy was having major trouble tolerating wheat products, I quite literally cried. I couldn't believe I would have to live without cakes n bread n chapati n the likes.
And then I stumbled upon Cassava Flour. Was told it could easily be substituted with Wheat...
Well, Let's just say it has been a fun journey.., experimenting with Cassava Flour. My first attempt, of course, was pancakes.

Ingredients

  • 1 tablespoonhoney (or sugar)
  • 2Eggs
  • 2 Tablespoonsmelted Margarine
  • Pinchsalt
  • 3/4 cupcassava flour
  • 1 CupMilk
  • Oil for frying

Steps

  1. 1

    Combine all ingredients using only 1/2 cup of milk in a blender and blend for 1 minute or until thoroughly combined.

  2. 2

    Add remaining milk (on as need be basis, depending on how light or thick u want ur pancakes) and blend for another 30 seconds

  3. 3

    Heat a lightly oiled non stick pan, over medium heat.

  4. 4

    Pour some of the batter onto the pan and tilt it with a circular motion so that the batter coats the surface evenly.

  5. 5

    Cook the pancake for about a minute or two, until the bottom is light brown and can easily be loosened with a thin spatula.
    Turn it and cook the other side.

  6. 6

    Remove from Pan. Serve.

My son has been having stomach problems and we're off wheat. I was so relieved so discover cassava flour and being only 50/- a kg, it's so much cheaper!! 😊
