Blend the achiote paste with the allspice, cloves, garlic, salt, cumin, oregano, orange juice, and lime juice. Set aside 1 cup of this mixture.

Wash the pork well and marinate it with the blended mixture. For best results, marinate overnight. Place the pork in a clay pot lined with banana leaves, cover with aluminum foil and a lid, and cook for 2 hours.

Check that the meat is very tender, then remove from heat and shred it completely. In another pot, season the shredded meat with the reserved cup of achiote mixture and adjust salt and chicken bouillon powder to taste.
