Mixed Veg Uttapam

To start with heat oil in a pan. Add cumin seeds and let them splutter. Then add green chilli, ginger, curry leaves, onion, beans, carrot, capsicum, spring onion greens, turmeric powder and a pinch of salt. Saute for few minutes and remove the veg mixure from the pan.

Take dosa batter in a bowl. Add the fried veg mixure to it and mix well.

Now heat a non-stick tawa. Grease it with oil. Once the tawa becomes hot, pour 2 laddleful of batter mix and spread it in a circular motion. Cover it with a lid and cook on a medium flame for few seconds.

Then open the lid and flip it. Add oil a little around the edges and cook for 2-3 minutes more or till just done.

Repeat the process to make similar uttapams with rest of the batter mix.

Serve the mixed veg uttapam with coconut chutney or sambar.
