There are many different salsas for making chilaquiles. We already have a video for Red Salsa that’s traditional in the north of the country, made with guajillo or red chile. This time, we’re sharing a salsa that’s easier to make, spicy, and red.
The number of chiles depends on how spicy you want your salsa. It’s quick to prepare—about 30 minutes.

Boil the serrano chiles. When the water starts to bubble, add the tomatoes, onion, and garlic. Cook for 10 minutes.

Remove the ingredients to a plate and let cool for 5 minutes.

Blend until you have a very smooth salsa.

Heat a pot over low heat with a little oil. Add the salsa, 1 tablespoon of salt, and 3 sprigs of epazote. Cook for 10 minutes.

Enjoy with your chilaquiles.
