Cheesy Spinach and Mozzarella Rigatoni

Cooking Instructions

Mix tomato puree, tomato paste, 2 cups water, oil, honey and spices together in the slow cooker. Set to low and cook for 4 to 5 hours.

Turn slow cooker to high and mix in 1 cup of water, pasta, spinach and cottage cheese.

Top with mozzarella cheese.

Cover and let cook for about 45 minutes for whole grain pasta and 25 minutes for white pasta.

Serve with Parmesan cheese.

I love to use rigatoni with meat sauce because it picks up the sauce so well! Also, I like to change my sauce ingredients depending on what I have around at the time, and what I'm in the mood for, as far as vegetables & toppings go. One thing I almost always add to my sauce is the brown sugar. The kids and I both enjoy the sweetness in the sauce. You can make this into a cheesy sauce by adding parmesan and/or other cheeses and even cream. You can make this into a savory & spicy sauce by adding crushed red pepper and/or other hot peppers. You can add vegetables to the sauce to make a "garden medley." And, you can even make this with vegan meat! Of course sauce will always get better the longer it simmers with the ingredients. This is made quick for dinner. This was made with leftover steak we brought home from a new steakhouse we tried that was less than stellar (lesson learned, we're sticking to our "regular" place from now on lol). I didn't want to completely waste our money so I was just trying to figure out a way to salvage the mess we brought home using what I had on hand. This turned out pretty dang good, and using evaporated milk as a substitute for cream is always tasty (I do it often). You can definitely use fresh steak if you don't have any leftover from another meal, and it absolutely can be any cut you wish! StephieCanCook -

I used to make this dish for the entire family when I was younger. Since then, I've perfected it. You can substitute hamburger meat for a smoked sausage. Or add in any veggies you like. Sometimes I saute squash and add a layer of that to the dish. But beware this dish is full of carbs, calories and cheesy goodness. I hope you enjoy!Ashley

I have substituted different things in and out when I had some things and not others ..
