Crock pot caramelized onions
(about 3 cups)
Combine onions and butter in a crock pot.Cover and cook on low for 8-18 hours. Stir a few times after the butter is melted to make sure onions are evenly coated. Onions are done when they are brown and tasty.

Add beef broth, wine, sherry, Worcestershire, garlic, bay leaf, pepper, and thyme. Stir well. Cover pot and set on high (4 hours) or low (8+ hours).

When soup is ready, place oven-proof bowls on large baking sheet and set aside. Place broiler rack 6 inches from heat; turn on broiler.

Toast bread. Divide soup among bowls. Set toast in bowl. Sprinkle gruyere over bread. Sprinkle each with 1 teaspoon Parmesan cheese (or more to taste). Place baking sheet under broiler 1 minute or until cheese melts. Using pot holders, serve at once, making sure to warn diners that bowls are very hot!
