Ingredients

  1. 6-7dried lasagne sheets
  2. 1 tinchopped tomatoes
  3. 1 tbspcornflour
  4. 1vegetable stock cube
  5. 1 tbsptomato puree
  6. 3 stalkscelery, chopped
  7. 1/2 cupmushrooms, chopped
  8. 1/2leek, chopped
  9. 1courgette, chopped
  10. 1onion, chopped
  11. 1pepper, chopped
  12. 500 mlmilk
  13. 50 gbutter
  14. 50 gplain flour

Steps

  1. 1

    Sautee vegetables in a large skillet.

  2. 2

    Add chopped tomatoes, tomato puree, and crumbled stock cube

  3. 3

    Season with mixed herbs, salt and pepper to taste.

  4. 4

    In a seperate saucepan, make the white sauce. Melt the butter over a medium-low heat, stir in flour and gradually add the milk, stirring continuously.

  5. 5

    In a large oven proof dish, add layers of the vegetables, dried lasange sheets, and white sauce

  6. 6

    Top with a handful of cheese and cook for roughly 40 minutes at 180-200°c or until the sauce is bubbling and the lasagne sheets are soft
