Minced meat can be added to this to substitute some of the vegetables. The vegetables should be roughly cut into chunks you avoid them from going soft. Cornflour can be added to the tomato sauce to thicken it if necessary.

Sautee vegetables in a large skillet.

Add chopped tomatoes, tomato puree, and crumbled stock cube

Season with mixed herbs, salt and pepper to taste.

In a seperate saucepan, make the white sauce. Melt the butter over a medium-low heat, stir in flour and gradually add the milk, stirring continuously.

In a large oven proof dish, add layers of the vegetables, dried lasange sheets, and white sauce

Top with a handful of cheese and cook for roughly 40 minutes at 180-200°c or until the sauce is bubbling and the lasagne sheets are soft
