Sautee vegetables in a large skillet.

Add chopped tomatoes, tomato puree, and crumbled stock cube

Season with mixed herbs, salt and pepper to taste.

In a seperate saucepan, make the white sauce. Melt the butter over a medium-low heat, stir in flour and gradually add the milk, stirring continuously.

In a large oven proof dish, add layers of the vegetables, dried lasange sheets, and white sauce

Top with a handful of cheese and cook for roughly 40 minutes at 180-200°c or until the sauce is bubbling and the lasagne sheets are soft
