We love croquettes, but we don't like how much oil is usually involved, so we decided to bake them instead. They're absolutely delicious—healthier without losing any flavor!

First, cook the chicken. You can use any pot to stew it for about 15 minutes. Once cooked, let it cool slightly, then chop or shred it finely.

Chop the chicken into small pieces or shred it until fine.

Melt the butter in your largest skillet over medium-low heat. Add the finely chopped onion and cook for a few minutes, then add the minced garlic and sauté until golden.

Gradually add the flour by spoonfuls, stirring well so it blends smoothly. Pour in the milk in three parts, stirring constantly to dissolve the flour. Add salt and nutmeg.

Once the mixture is smooth, add the chicken and mix well for about 3 minutes.

Transfer the mixture to a large container and let it cool. Place a damp cloth over the top to prevent a crust from forming. Once cooled, refrigerate for at least 30 minutes. After that, the dough will be ready to shape into croquettes.

Shape the croquettes by hand, or for a trick: cut the bottom off a large plastic water bottle, fill it with the dough, and use your gloved hand to push the dough out in logs, then cut into pieces.

Dip each croquette in beaten egg, then coat with breadcrumbs. They're now ready to fry, bake (which is much healthier and less greasy), or freeze for later.
