Cook yam with curry salt and maggi. When cooked allow to cool before mashing.

Cook meat with onion garlic and seasoning. When cooked grind and keep aside.

Add little oil in a pan. Add tumeric, onions, garlic, ginger and fry. Then add scotch bonnet and tattashe. Add seasoning.

And yam balls is ready.

Put the mashed yam into a big bowl, add in minced meat and fried sauce. Finely chopped spring onion, parsley, salt and pepper. Mix together and taste to adjust seasoning. If it is too dry add 1 egg yolk or 1 spoon meat stock to act as binder.

Scoop and roll into balls and toss in flour.

Break eggs add spices and seasoning. Dip yam balls into egg and fry till golden brown.
