The flavour of classic samosa muffin recipe is a great way to used up leftover mashed potatoes. Samosa is a triangular Savory pastry that is traditionally fried in oil.

The flavour of classic samosa muffin recipe is a great way to used up leftover mashed potatoes. Samosa is a triangular Savory pastry that is traditionally fried in oil.
This are healthy version and mini size.
Steps

Preheat oven 400F Grease a muffin mould and set aside.

Heat oil in a large pan on medium high flame heat.

Add onion and saute for until soft about 3 minutes

Add garlic ginger and green chilli and cook for 2 minutes
- 5
Add garam masala powder, salt, dry mango powder, pepper powder and coriander leaves and cook for 1 more minutes. Stir constantly.

Add peas and stir to coat. Remove from heat and add mashed potatoes and mix well.

Spoon samosa mixture evenly in muffin mould and bake for until golden brown approximately 25 minutes.

Allow to slightly cool for at least 5 minutes to make sure muffins don't fall apart.

Remove from mould and serve with tea and tomato ketchup.
