Steps

Wash potatoes, season with salt and black pepper. Heat oil and deep fry

Drain and set aside. Heat the oil again and re fry the chips for crunchiness and more deep color. Drain

Take another pan, add few drop of oil, add garlic and saute on low heat. Add tomato sauce, red curry paste, mix well.

Add the chips, mix slowly with a wooden spoon on low heat.

When the ingredients are well incorporated, remove from heat and serve.

Note: make sure you fried the chips two times as this will prevent the chips from becoming soggy when mixed with the tomato sauce.. Also you can add some ground spices of your choice
