Cooking Instructions

Peel mango back, slice into blender, add watermelon and banana. Blend to smooth paste. Put in jar and refrigerate while preparing the sandwich.

Rinse lettuce well using 1 capful white vinegar so as to help remove the tiny sand. Strain and cut in rectangles. Set aside

Remove bones and back of smoked fish. Scramble with fingers and set aside.

Boil eggs. Peel back and cut in circles. Set aside

Dress bread in little butter and place in hot toasting machine to brown a little.

Dress the bread with mayonnaise, then sprinkle the scrambled smoked fish, next is the lettuce. Cover lettuce with bread and dress with mayonnaise, then the eggs and lastly lettuce. Cover with bread

Cut the sandwich in diagonal.
