Coconut and banana oat bran porridge

This is one of my favourite, quick breakfasts - 5 minutes from start to finish. It's another one of Louise Parkers' meals and this is pretty much how she does it, with a couple of twists from me! It really fills you up and its so healthy - totally makes me feel very self-righteous every time I eat it!
Oat bran can be found everywhere - it's not some fad health food and its not expensive at all. It has nearly 50% more fibre than plain oats which is fab for your tummy!

Mix the oatbran, milk, dessicated coconut and vanilla paste in a pan. Heat on a medium heat until simmering slightly.

Add the banana slices and reduce heat to medium/low and cook for a few minutes until thickened and hot.

Lightly toast the flaked almonds under the grill while the porridge cooks.

Turn off the heat and mix in the almond butter.

Pour into a bowl, add you honey of using and top with the almonds. Enjoy!
