Coconut and banana oat bran porridge

This is one of my favourite, quick breakfasts - 5 minutes from start to finish. It's another one of Louise Parkers' meals and this is pretty much how she does it, with a couple of twists from me! It really fills you up and its so healthy - totally makes me feel very self-righteous every time I eat it!
Oat bran can be found everywhere - it's not some fad health food and its not expensive at all. It has nearly 50% more fibre than plain oats which is fab for your tummy!

Ingredients

5 minutes
1 serving
  • 2heaped tablespoons oatbran (I used Tesco's)
  • 1 cupcoconut milk (could use dairy or other milks)
  • 1 teaspoonvanilla paste (optional)
  • 1 tablespoonunsweetened dessicated coconut
  • 1small banana or half a large banana, sliced
  • 2 teaspoonsalmond nut butter
  • handfultoasted flaked almonds (optional)
  • squeezehoney (optional if you like it a sweeter porridge)

Steps

5 minutes
  1. 1

    Mix the oatbran, milk, dessicated coconut and vanilla paste in a pan. Heat on a medium heat until simmering slightly.

  2. 2

    Add the banana slices and reduce heat to medium/low and cook for a few minutes until thickened and hot.

  3. 3

    Lightly toast the flaked almonds under the grill while the porridge cooks.

  4. 4

    Turn off the heat and mix in the almond butter.

  5. 5

    Pour into a bowl, add you honey of using and top with the almonds. Enjoy!
