Clean and wash the fish. Make a few slits along the sides and insert slices of garlic. Season with salt and pepper.

Slice the onion into rings and place them inside the fish along with the cilantro. Dredge the fish in flour.

Fry in very hot oil until golden brown on both sides.

Serve with your favorite salad and rice.
