Boil the lentils in 2 cups of water (about 480 ml) with a pinch of salt. Adding salt helps the lentils keep a darker color.

Chop the onions and sauté them well. Add the rice, cooked lentils, salt, allspice, and bouillon cube. Stir for five minutes over very low heat.

Add the lentil cooking water. If needed, add more water.

Once it comes to a boil, reduce the heat to very low.

When the rice is cooked, stir and let it rest. Notice how the rice changes color and becomes the same color as the lentils.

Serve with plain yogurt or cucumber yogurt salad. You can find my cucumber yogurt salad recipe in my other recipes. Garnish with fried onions.
