Chop onion, carrots and celery. Fry in a deep roasting tin in some oil. Add chopped mushrooms. Add meat and fry to seal. Add wine and let it evaporate. Add stock, cover and cook in the oven at 160 for about 90 mins, turn once or twice. Meanwhile make your mash. Peel and chop potatoes. Boil in salted water. Drain and mash with saffron and butter

When ready, carve your meat and serve with some of the sauce :)
