Soak the fava beans and chickpeas in cold water overnight. Then grind them with the vegetables using a meat grinder or food processor.

Add the spices and salt, and mix well. Add the baking soda 15 minutes before frying.

Shape the falafel mixture into patties by hand or with a falafel scoop, and fry in hot oil until golden. Place the falafel on paper towels to absorb excess oil.

Serve the falafel with tahini sauce, vegetables, and pickles. You can serve it on a plate or, most commonly and deliciously, as a sandwich.
