Ingredients

  1. 1 1/2 cupssplit fava beans (about 300 grams)
  2. 1 cupdried chickpeas (about 200 grams)
  3. 1/2 cupchopped parsley (about 15 grams)
  4. 1/4 cupchopped cilantro (about 7 grams)
  5. 2 stalksgreen onions, chopped
  6. Leavesfrom 3-4 sprigs fresh mint
  7. 2 clovesgarlic
  8. 1onion
  9. Pinchcumin
  10. Pinchblack pepper
  11. Pinchground coriander
  12. 1 tablespoonbaking soda
  13. Salt to taste
  14. For serving:
  15. Pita bread
  16. Tahini sauce
  17. Chopped vegetables: tomatoes, lettuce, parsley, radishes, green onions, mint
  18. Pickles
  19. Spicy pickles or hot pepper paste

Steps

  1. 1

    Soak the fava beans and chickpeas in cold water overnight. Then grind them with the vegetables using a meat grinder or food processor.

    Add the spices and salt, and mix well. Add the baking soda 15 minutes before frying.

  3. 3

    Shape the falafel mixture into patties by hand or with a falafel scoop, and fry in hot oil until golden. Place the falafel on paper towels to absorb excess oil.

    Serve the falafel with tahini sauce, vegetables, and pickles. You can serve it on a plate or, most commonly and deliciously, as a sandwich.
