Ingredients

  1. 3Drumstick cut into 2”inch
  2. 1Potato big cut into thick strip
  3. 1Brinjal cut into chunks
  4. 12French beans cut into halves
  5. as neededPumpkin cut into chunks
  6. 1/2Radish cut length wise
  7. 5-6 piecesMangodi(Bodi)5-6
  8. as neededPalak leaves
  9. For tempering:
  10. 1 tsppanch phoron
  11. 2Dry red chillies
  12. 3 tbspMustard oil
  13. For Masala
  14. 1 tspTurmeric powder
  15. 1 tspRed chilli pow
  16. 1.5 tspCoriander powder
  17. 1/4 tspMustard powder
  18. to tasteSalt
  19. 1.5 tspGur/jaggery

Steps

    Cut vegetables and clean the palak and chop roughly.

    Bengali dish requires frying of each vegetables according to it's cooking time,so fry each vegetables separately.In 2 tbsp of mustard oil and keep aside.

    In the same kadhai add 1 tbsp of mustard oil when heated add the tempering when splutter add the palak and fried vegetable with dry masala haldi,dhania,mirchi,sarso powder and salt except gur.Cook in medium heat till all the veggies are done and the water dries up at this moment add the gur and cook on high flame stirring continuously.
