Pork Hamburg Steak with Baked Cauliflower

This is a Japanese-style hamburger recipe. It suggests mixing fresh milk with ground pork. The best milk is pasteurized milk, which doesn't last long. The smallest bottle available is 200 ml, and I always have some left over. Instead of mixing it with Kahlua to drink, I use it to bake cauliflower to cut the richness.

As for why you should press the center of the hamburg steak to make a dent, I asked a Japanese friend and got this answer: "If you don't press it, the center will puff up when frying, and the edges won't touch the pan, causing uneven cooking." I also asked a Thai friend: "Pressing it makes it look more refined, like a noble style."

Ingredients

2-3 servings
  • Pork Hamburg Steak
  • 10 1/2 oz (300 grams)chilled ground pork
  • 1onion, finely sliced
  • 1egg
  • 3 1/3 tablespoons (50 ml)fresh milk
  • 1/2 cupbreadcrumbs
  • Barbecue sauce or gravy, to taste
  • Baked Cauliflower
  • 2 teaspoonsunsalted butter
  • 1 teaspoongarlic, finely chopped
  • 1/2 teaspoonsalt
  • 1 teaspoonground black pepper
  • 1 tablespooninstant dashi
  • 1 headcauliflower, chopped or grated
  • 2/3 cup (150 ml)fresh milk

Steps

    Heat a pan with a little oil over medium heat. Sauté the onion until it becomes translucent, then let it cool. Mix with the ground pork and set aside.

    In a bowl, crack the egg and beat until smooth. Add fresh milk and breadcrumbs, then mix in the ground pork and onion until well combined.

    Divide the pork mixture into 4 portions. Throw each portion against the bowl to remove air, shape into a round patty, and press the center to make a dent. (If not frying immediately, store in the freezer.)

    Heat a pan with oil over medium heat. Add the hamburg steaks and fry for about 100 seconds on each side. Remove and place on a plate, then pour sauce over as desired.

    In the same pan, add butter, garlic, and cauliflower. Sauté until golden, then season with salt and pepper.

    Add fresh milk and mix well. Cover and bake over low heat for 5 minutes. Turn off the heat and serve. You may serve with a fried egg or other salad greens.
