A high protein, high fat and high taste start to the day. My low carb month is clearly going well...

Add vinegar to pan full of simmering water. Give it a swirl and carefully add eggs. Poach eggs for 5 minutes. Make sure water is only ever simmering.

Meanwhile, chop up avocado and start making toast.

Place avocado on toast and cover with tsp paprika. Mush it up a bit so eggs won’t fall off.

Drain eggs and place on top. Cover with tsp paprika.
