Marinate the pork with all the seasonings above, then thread the meat closely onto skewers. Let it marinate overnight. Preheat the oven to 480°F (250°C) on convection with the top heat. Bake for 15 minutes, turn the skewers, then bake for another 10 minutes.

Prepare the sweet fish sauce.

For the pickled vegetables, mix vinegar, granulated sugar, and boiled, cooled water. Julienne daikon and carrots, soak them in salt, then rinse with cold water. If you soak them several times, the daikon will lose its strong smell.

Heat the vegetable oil and pour it over the chopped green onions.

Separate the banh hoi sheets, roll them up, and sprinkle with green onions.
