Malabar Egg Curry is a delicious egg masala , where hard boiled eggs are added into onion tomato based gravy seasoned in coconut oil with lots of curry leaves and mustard seeds. It's then simmered and cooked in coconut milk to get a rich flavorful taste. This curry has a sweetish tone from coconut milk that is balanced with hint of heat from spices.

Ingredients

  1. 5eggs
  2. 2 TbspCoconut Oil
  3. 1/2 TspMustard Seeds
  4. 2 sprigsCurry Leaves
  5. 3Green chillies, Chopped
  6. 1/2 CupOnion, finely Chopped
  7. 1 Tomato, finely chopped
  8. 3/4 CupThick Coconut Milk
  9. 1 CupThin Coconut Milk
  10. 1/2 TbspGarlic Paste
  11. 1/2 TbspGinger Paste
  12. 3/4 TbspRed Chilli Powder
  13. 3/4 TbspCoriander Powder
  14. 1 TspBlackpepper powder
  15. 1/2 TspFennel Seeds Powder
  16. 1/4 TspTurmeric Powder
  17. 1/2 TspGaram Masala Powder
  18. 1 3/4-2 TspSalt, or as required

Steps

30 minutes
  1. 1

    Hard boil the eggs, open the shell, and slice the eggs into 2 halves.

    In a pan, add 2 Tbsp of coconut oil, add mustard seeds allow it to crackle. Now add in curry leaves and broken dried chillies, chopped green chillies and saute for a minute.

    Add ginger garlic paste and saute till the hint of raw smell vanishes.

    Now add in finely chopped 1/2 cup of onion and continue to saute till it looks light golden brown.

    Finely chop or roughly process 1 large tomato and add this into the onion mixture. Mix well everything and allow tomatoes to get cooked.

    Now add all the spices, mix well and saute for 2 minutes.

    Add 1 1/2 cup of thin coconut milk,mix well such that everything blends well together.

    Keep the flame on medium heat, add salt and bring it boil.

    Add in boiled eggs, gently mix everything such that masala coats eggs.

    Close lid and keep in simmer for about 10 minutes.

    Now add Thick coconut milk and continue to cook in simmer till you reach the desired consistency.

    Serve it with Appam, Puttu, Pathiri or even with Roti or steamed rice.
