Red rice -Actually it is not red rice but equally nutricious red or brown rice.
Rich in fiber protein calcuim and many other minerals far better than white rice.
12yrs.ago I visited Kerela. Allappuzha former name Alleppey. There is a sea beautiful place. On island there is a rice milk nearer to hotel.They use brass utensils to serve food.coconut water as welcome drink.

Ingredients

  1. For Rice :-
  2. 1/4 cuptender coconut water
  3. 1 cupred rice
  4. 1/2tender coconut malai

  7. 1 tspurad dal
  8. 1 tbspchana dal
  9. 1 pcbrinjal
  10. as neededFew curry patta
  11. 2-3lady finger
  12. 2-3tindora
  13. 2 tbsp.Oil
  14. 1 pc.Dry red chilli
  15. 1 tspgarlic powder
  16. 1/2 tspchilli powder
  17. 1/4 tsp.turmeric powder
  18. 1 tspMustard seeds
  19. 1 pc.Potato
  20. 2 tbsp.tamarind pulp
  21. 1/4 cupcoriander chopped
  22. For Thakkali:-
  23. 2.tomato
  24. 1 pc.Onion
  25. 1/2 cupdry coconut
  26. 3-4 tbspcurd
  27. 1 tbspoil
  28. 2 pc.green chilli
  29. 1/2 tsp.Mustard seeds
  30. as neededFew curry leaves
  31. 1/2 tspcumin seeds
  32. to tasteSalt
  33. 1/4 tsp.asafoetida
  34. 1dry red chilli
  35. For Sambhar:-
  36. 2 tbsp.Tuver dal
  37. 1 tsp.Chana dal
  38. 1 tsp moong dal
  39. 3-4dry red chilli
  40. to tasteSalt
  41. 1 tbspdry coriander seeds
  42. as neededFew curry leaves
  43. as neededKhada masala
  44. 1/2 tspturmeric powder
  45. 2 tbsptamarind
  46. 1 tspmustard seeds
  47. 1/2 tspasafoetida
  48. 1/2 pc.drum stick
  49. 1 pc.potato
  50. 1 pc.onion
  51. 2 tbsp.Sambhar masala
  52. 1/4 tspfenugreek seeds
  53. 2 tbspoil
  54. 1/4 cupbottle gaurd
  55. 1/4 cupcoriander
  56. 1bay leaf
  57. 1 tsprice
  58. 1/4 tsp.black pepper
  59. as neededFew curry leaves for tadka

Steps

  1. 1

    Vegetables Matta Rice:-Soak red rice for 2hrs. Add 1glass water salt nboiled in cooker make 2-3whistle and strain.

    Heat oil add all veggies garlic powder salt and saute add 1/4cup tender coconut water cover the lid for 5-7mins. on slow flame. Add boiled rice With tender coconut malai. saute ladies finger and add in a rice. Add tamrind pulp mix well and serve.Garnish with tender coconut malai.

    Thakkali Pachadi:- Chopped tomatoes and boiled in water. Mix tender coconut malai onion chilli 1tb curd salt in a mixie jar and churn. Add boiled tomato again curd and churn mix well and churn. Serve in a bowl.For tadka:-Heat oil mustard cumin seeds curry leaves and dry red chilli. Pour ona tomato mixture. THAKKALI PACHADI IS READY.

    For Sambhar:--Roast dry dal in a pan one by one. and take out in a plate. Now roast all masala and khada masala. Take in a mixie jar add asofortida turmeric powder red chilli powder mustard seeds and oil. Churn and make dry powder.

    Heat oil add mustard seeds red chilli and all chopped veggies saute add 2tbsp powder. saute and add water cook on a slow flame add sambhar masala salt red chilli powder turmeric powder and soaked tamrind cover and simmer 15-20 mins. Sambhar is ready.
