Panchratna Dal Fry

Rinse the deals and then soak it in sufficient water for about 30 minutes.

Pressure cook all deals in 2 cups of water with a pinch of haldi, oil and salt for 2 whistles then lower the heat to medium and cook for another 5 minutes.

Once done mash them with a masher to make it smoother.

In a wok heat ghee and oil together add cumin seeds, hing, bay leaf and dried red chilli as tempering.

When cumin seeds start to sputter add cloves, green cardamom and cinnamon.

Add onion and ginger garlic paste and cook till the rawness goes away.

Add tomatoes and cook the untill they are mushy.

Add dry spices and fry well and add slit green chilli.

Add the boiled deals along with it's water and cook for 4-5 minutes on low flame till everything is incorporated.

Season with salt and add water only if you want it a little runny.

Turn off the flame when done and add chopped coriander leaves.

Prepare the second tempering by heating oil in a small tadka pan add cumin seeds when it crackles add red chillies, garlic. Switch off the heat add red chilli powder and pour it over the dal immediately.

Drizzle more ghee on top of you want. Add lemon juice and mix well Serve with roti, steamed rice.
