Ingredients

  1. 2large eggplants, cut into 1/2 inch thick rounds
  2. 1/2 tsphaldi
  3. 1 tspred chili powder
  4. 1 tspdhania powder
  5. Oil for frying and tempering
  6. to tasteSalt
  7. 1 cupyogurt, lightly whipped
  8. Fried onion for topping
  9. Fried almond slivers or flakes for topping

Cooking Instructions

    Method: 1) Place oil in a large wok for deep frying on high heat.

    2) Wash and dry the eggplants and cut them into 1/2 inch thick rounds. Fry the eggplant slices until golden brown on both sides. Remove from oil and place on kitchen towel to absorb excess oil. Once you have fried all the eggplant place the rounds in a overlapping pattern in your serving dish.

    3) In a small frying pan heat a little oil and add in all the spices and seasoning. Add in a few tablespoons of water to make like a curry paste. Pour the mix on top of the eggplant slices. Make sure to cover the whole base. Top off the dish with big spoonfuls of the whipped yogurt to cover the whole dish.

    4) In another frying pan, fry off some finely sliced onions until golden brown and crispy. Then fry off some almond slivers or flakes, whichever you prefer, until light golden. Decorate your dish with the fried onions and almonds.

    The dish is ready to be served and enjoyed!

    Note: my picture of the dish doesn’t include onions because my father doesn’t like them and I ran out of almonds so added crushed salted peanuts instead. You can use green chillies for decoration it's your choice.
