Peel the cucumbers and grate them.

Place the grated cucumber in a strainer or a clean towel and squeeze well to remove as much moisture as possible.

In a bowl, combine the strained yogurt, grated cucumber, vinegar, dill, and black pepper. Mix well.

In a mortar, mash the garlic with the olive oil and salt until smooth.

Add the garlic mixture to the yogurt and mix thoroughly until everything is well combined.

Refrigerate the tzatziki for at least one hour before serving.
