Ingredients

  • 2red onions
  • 2small aubergines
  • 3courgettes
  • Balsamic syrup
  • Olive oil
  • Salt and pepper

45 minutes
  1. 1

    Chop the onion, aubergines and courgettes quite chunky. Add them to a roasting tin.

    Give a good coating of olive oil all over. Salt and pepper well and mix the veggies.

  3. 3

    Drizzle the balsamic syrup over the top.

    Pop into the oven for 30-40 minutes (180 fan).

I love to cook but hate to do dishes. Ideal recipes taste delicious, are cooked in one pan and in less than 30 minutes. Although the occassional lengthy recipes for a weekend are lovely too.
