Ingredients

40 minutes
3 persons
  1. For potato masala
  2. 2 large boiled potatoes,cut into small pieces
  3. 1 medium size onion,thinly sliced
  4. 2 tspgrated ginger
  5. 12-15curry leaves
  6. 2-3green chillies, splited
  7. 1 tspmustard seeds
  8. 1 1/2 tspcumin seeds
  9. 1 tbspsplit Bengal gram/ chana dal
  10. 1 tbspsplit black gram/ urad dal
  11. 1 pinchasafoetida / hing
  12. 1/2 tspturmeric powder
  13. 1 tbspgram flour/ besan
  14. 12-15cashew nuts,cut into halves
  15. 2 tbspfreshly chopped coriander leaves
  16. 2 tbspoil
  17. 1/4 tspsugar
  18. 2 tsp or as per tastesalt
  19. For poori
  20. 1 cupwheat flour
  21. 1 cupall-purpose flour
  22. 1 tspmelted clarified butter/ghee
  23. 1 tsprava / semolina
  24. 1 pinchsugar
  25. 1/2 tsp or as per tastesalt
  26. 1/2 cup or as requiredwater
  27. 2 cupsoil,for deep fry

Steps

40 minutes
  1. 1

    For potato masala;heat oil in a pan, reduce the flame,add mustard seeds,let them crackle;add cumin seeds, chana dal,urad dal,saute till the dal become golden.

    Add ginger, green chillies,curry leaves, cashew nuts and saute it for couple of minutes.

    Add sliced onions, asafoetida,saute it till the onions become translucent.

    Add gramflour,mix it well, cook it in low flame about 3-4 minutes.

    Now add chopped potatoes, turmeric powder,salt, saute it for couple of minutes.

    Add 3/4 cup of water, cover and cook until the potato masala have right consistency,not too thick not too thin.

    Add chopped coriander leaves, put out the flame, potato masala is ready.

    For poori; in a bowl put wheat flour, all-purpose flour,rava,ghee, salt,sugar,mix well to make a crumbly mixture.

    Add water little by little,make a dough,dough should be smooth and stiff.

    Grease with little oil,Cover and keep it for 10 minutes.

  11. 11

    Make small balls from the dough,roll it into poori, thickness should be medium, prepare all the poori in same process.

  12. 12

    Heat sufficient oil, fry it from both sides till it gets golden brown.

    Serve hot with potato masala, enjoy.
