Wash and soak rice for 30 mins.

In a thick bottom pan, boil milk. Add 1/4 cup water. Don’t add water if you are taking low fat milk.

Add the soaked rice as milk comes to boil. Keep stirring.

Keep cooking the milk and rice untill the rice is cooked well and milk is reduced to half. Keep stirring else it will stick at bottom.

Now add sugar and chopped nuts like cashew, almonds, pistachios and few raisins.

When sugar is dissolved and the kheer has become thick add cardamon powder.

Kheer is ready. You can serve it a little warm or chilled as per preference. It goes best with some puffed puri or just as a dessert.
