Bunny cupcakes

I’m not sure who was more excited about these cute as a button bunny cupcakes, my kids or well… me!
Ok fine, I’ll admit I was SUPER excited and loved how these turned out!!! If I’m being totally honest every adult I’ve offered one of these to were thrilled!

Preheat oven to 180°c. Sift dry ingredients (cake flour, sugar, baking powder, salt) into a bowl, whisk together the wet ingredients (vegetable oil, milk and vanilla essence) excluding the eggs.

Add to dry ingredients and whisk until lump free. Don't over mix.

Crack in the eggs and whisk until combined. Using a 1/4 cup measuring cup scoop cupcake batter into cupcake liners and bake for 25-30 minutes or until a wooden skewer inserted comes out clean.

While cupcakes are cooling, make the buttercream. Cream the butter, sift in the icing sugar adding the vanilla essence and a tablespoon if milk at a time as much as you need to get a light and fluffy buttercream

Place frosting in a large decorating bag with a round tip nozzle and pipe a mound of frosting onto each cupcake.

Cut each marshmellow in half diagonally and dip into the pink sugar (3 tablespoons of white sugar mixed with a few drops if pink food colouring) place on cupcakes sugar side up to resemble ears.

Place the chocolate speckled eggs onto the frosting to resemble a nose and chocolate chips for the eyes.
