Heat oil in a pan. Then add whole dry red chilli, cumin & mustard seed,ginger &green chillies. Saute everything altogether.

Add sliced onion and cook this over low heat until the onion turns soft and translucent.

Then add turmeric,red chilli,coriander powder and salt.Mix well.

Add boiled rice, lemon juice,mint & coriander leaves. Cook for 2-3 minutes and stir it very carefully.

Serve hot with onion raita or any of your favourite raita.
