This is a family recipe handed down from my husbands welsh family. Its a traditional welsh fruit cake/bread that you slice and spread with butter. Hope you enjoy making and eating it.

Ingredients

90 mins
  1. 450 g/ 1lb mixed dried fruit
  2. 225 g/ 8oz light muscavado sugar
  3. 300 ml/ 10 fluid oz warm black tea
  4. 2 tablespoonsorange marmalade
  5. 2 teaspoonsground cinnamon
  6. 1egg beaten
  7. 450 g/ 1lb self raising flour

Cooking Instructions

90 mins
  1. 1

    Put fruit, sugar and tea into a bowl and leave to soak overnight.

    Add marmalade, cinnamon, beaten egg and flour. beat well till blended.

    Grease a 1lb loaf tin and pour in mixture.

  4. 4

    Bake for 90 about minutes at gas mark 3 / 160 c.

    Cool in the tin for 10 minutes then put cake onto a cooling rack and leave to cool.

    Leave for 24 hours before eating. store in an airtight tin.
