Tom Yum Snakehead Fish Soup

Cut the fish into pieces and wash thoroughly. Set aside to drain.

Bring water to a boil in a pot with galangal, lemongrass, and salt. Add the fish and cover until cooked. Add tomatoes, fish sauce, tamarind juice, and lightly crushed roasted shallots and garlic. Taste for a sour flavor. Once boiling again, add kaffir lime leaves, sawtooth coriander, and roasted dried chilies. Turn off the heat and serve.
