Baked Cod with Onions and Tomatoes
This is a recipe honed over the years and is simply delicious very simple to make and I'm sure will be very popular with your family. If you have time let me know what you think

Cook the potatoes in boiling salted water until almost done

Drain are then cut into thick slices and coat them with olive oil.

Arrange the slices around the edge of a greased oven proof dish and place the fish in the centre

Heat remaining olive oil in a frying pan, then add the onions and sauté gently for about 5 minutes until soft

Add the garlic, a raga know, basil, thyme, Worcestershire sauce and chilli then cook for 2 to 3 minutes

Add the tomatoes the wine or stock and salt and pepper to taste then simmer for several minutes.

Spoon half of the tomato mixture over the potatoes and the fish in the dish, then mix the remaining sauce in a small bowl with the breadcrumbs and cheese and pour over the fish

Bake in preheated 200°C oven for about 15 minutes or until the fish is cooked.

Sprinkle with the chopped parsley and serve immediately
