Ingredients

4 servings
  1. 12small new potatoes
  2. 1 tablespoonolive oil plus a little extra for coating
  3. 4whitefish fillets such as Cod
  4. 2 tablespoonsextra virgin olive oil
  5. 2onions finely chopped
  6. 1 teaspoonbasil
  7. 1 teaspoonthyme
  8. 1garlic clove crushed
  9. 1 tablespoonWorcestershire sauce
  10. 1red chilli (medium size) seeded and finely chopped
  11. 1 (425 g)can of chopped tomatoes
  12. 125 mLdry white wine or fish stock - see recipe on this blog
  13. 75 gfine breadcrumbs
  14. 50 gfreshly grated Parmesan or cheddar cheese
  15. to tastesalt and pepper
  16. chopped parsley to garnish

  1. 1

    Cook the potatoes in boiling salted water until almost done

  2. 2

    Drain are then cut into thick slices and coat them with olive oil.

  3. 3

    Arrange the slices around the edge of a greased oven proof dish and place the fish in the centre

  4. 4

    Heat remaining olive oil in a frying pan, then add the onions and sauté gently for about 5 minutes until soft

  5. 5

    Add the garlic, a raga know, basil, thyme, Worcestershire sauce and chilli then cook for 2 to 3 minutes

  6. 6

    Add the tomatoes the wine or stock and salt and pepper to taste then simmer for several minutes.

  7. 7

    Spoon half of the tomato mixture over the potatoes and the fish in the dish, then mix the remaining sauce in a small bowl with the breadcrumbs and cheese and pour over the fish

  8. 8

    Bake in preheated 200°C oven for about 15 minutes or until the fish is cooked.

  9. 9

    Sprinkle with the chopped parsley and serve immediately
