Zucchini noodles with Peanut Sauce

Ingredients

  1. For Sauce:
  2. 1/2 cupsmooth peanut butter
  3. 3 TbspLow Sodium Soy Sauce
  4. 1 clovesgarlic
  5. 1 Tbspgrated ginger
  6. 1 tspred chili paste
  7. 2 Tbsprice wine Vinegar
  8. 1/4 cuphot water
  9. 1 Tbsphoney
  10. 2 tspsesame oil
  11. For the salad:
  12. 3Zucchini's spiraled into noodles
  13. 4Scallions chopped
  14. 1/4 cupRoughly chopped Peanuts
  15. Fresh cilantro roughly torn

Cooking Instructions

    In a food processor or blender, add all of the ingredients to make the sauce and blend until smooth, set aside or store it in a tightly sealed container in the fridge until you’re ready to use it.

    In a large bowl, toss the spiralized zucchini with some of the dressing, then sprinkle with the nuts, scallions and cilantro and dig right in

    Side note: This dressing gets better and better as it sits. My suggestion is to store the zucchini and dressing separate from each other so that the zucchini remain nice and crispy.
