Ingredients

  • 300 grboneless chicken thigh, diced
  • 500 mlvegetable oil for deep frying the chicken
  • Batter ingredients:
  • 4 Tbspall purpose flour and 6 Tbsp ice water, mix well
  • Coating ingredients:
  • 6 Tbspall purpose flour
  • 1,5 Tbsprice flour
  • 1,5 Tbspcorn starch
  • 1/2 tspsalt or to taste
  • 1/4 tspwhite pepper powder or to taste
  • For the sauce:
  • 1 Tbspsalted butter
  • 2 clovesgarlic, minced
  • 2red chili peppers, diagonally thinly sliced
  • 2bird eye chili peppers, thinly sliced (optional)
  • 4green onions, thinly sliced
  • 1/4 tspsalt
  • 1/4 tspwhite pepper powder

Steps

  1. 1

    Wash the chicken and pat them with some paper towels to remove the excessive water. Set aside.

  2. 2

    Dip the chicken into batter ingredients.

  3. 3

    Mix all the coating ingredients in a bowl. Coat the chicken evenly with flour mixture. Shake the excess flour off. Deep fry the chicken until crispy and golden brown. Remove from the pan.

  4. 4

    For the sauce:
    Heat butter in a pan over medium high heat. Sauté garlic and red chili peppers until fragrant.

  5. 5

    Add bird eye chili peppers (optional), salt, white pepper powder, and green onions. Mix well.

  6. 6

    Add deep fried chicken. Stir well with the sauce.

  7. 7

    Serve warm over steamed white rice! Yum! 😋
