This is a different version of teriyaki, salmon dipped in the sauce after grilling instead of marinated before. The salmon will not get too tough or burnt from the teriyaki sauce, and it is also good warm or cold!

This is a different version of teriyaki, salmon dipped in the sauce after grilling instead of marinated before. The salmon will not get too tough or burnt from the teriyaki sauce, and it is also good warm or cold!

Lightly sprinkle salt on the salmon and leave for 15 minutes. Wipe off the excess water.

Cook the sake, mirin and soy sauce in a pan. Take off from heat once boiled and place the sauce in a flat container or a cooking tray (vat).

Grill the salmon until it is nice and crispy on the outside. Marinate the salmon in the sauce for a while. A sprinkle of Sansho pepper goes very well with this.
