Chicken Liver (Sowda) with Hummus and Tahini

Clean the chicken livers well. Soak them in water with salt and white vinegar for 15 minutes, then drain thoroughly and cut into cubes.

Heat the olive oil in a pan. Slice the garlic cloves thinly and sauté them in the oil. Add the chicken livers, season with salt and pepper to taste, and cook, stirring, until fully cooked through.

While the chicken livers are cooking, mash 1 clove of garlic. Empty the can of hummus into a bowl, add the tahini, lemon juice, a pinch of salt, and the mashed garlic. Whisk until well combined.

Check the chicken livers for doneness, then add the pomegranate molasses. Remove from heat and spoon the livers over the prepared hummus mixture.
