Ingredients

  1. 3-4 lbschicken breast
  2. 2 tbspolive oil
  3. 1 cupseedless grapes, halved
  4. 1 cupalmonds, sliced
  5. 2celery ribs, chopped
  6. 3scallions, thinly sliced
  7. 2 tbspfresh dill, chopped
  8. 1 tbspfresh parsley, chopped
  9. 1 cupmayo
  10. Juice of 1 lemon
  11. 1 tbspDijon mustard
  12. 1 tspkosher salt
  13. Fresh ground pepper

Cooking Instructions

    Preheat oven to 350

  2. 2

    Rub the olive oil all over the chicken pieces and sprinkle with salt and pepper

  3. 3

    Bake for 45 to 55 minutes, or until internal temp reaches 165

  4. 4

    Remove the chicken from the oven and let cool,roughly chop

  5. 5

    In a large bowl, mix together the chicken, grapes, almonds, celery, scallions, dill and parsley

  6. 6

    In a small bowl, mix together the mayo, lemon, mustard, salt and pepper

  7. 7

    Add the mayo mixture to the chicken mixture and stir until well mixed

  8. 8

    Cover with plastic wrap and refrigerate for at least an hour
