Make sure you use your largest mixing bowl for this recipe. These muffins are large and heavy. One muffin is a meal.

Mix the flour, sugar, baking powder, cinnamon, baking soda, and salt in a large mixing bowl.

Shred the carrots and apple. Combine with raisins, nuts, and coconuts.

Stir fruit mix into flour mixture.

Mix the eggs, oil, and vanilla in a small bowl. Add it to the fruit and flour mixture.

Stir it all together to where it is moist, but *don't over mix.*

Use cupcake liners or grease a muffin tin. Fill the cups 2/3 full. Bake in preheated oven at 350 degrees F.

Bake for 30 minutes or till tops spring back when touched.
