Marinate the pork:
Choose pork shoulder with a bit of fat for tenderness. Slice into thin pieces. This cut is slightly fatty and stays juicy and tender.
Marinate with: sautéed minced onion and garlic, oyster sauce, annatto oil, chili sauce, ketchup, sweetened condensed milk, seasoning powder (for 2.2 lbs pork, use 1 tablespoon of each seasoning),
black pepper, five-spice powder, chili oil (use 1/4 teaspoon each),
2 tablespoons soy sauce.

Fish sauce: Mix 1 part fish sauce, 1 part lime juice, 1 part sugar, 2 parts water, and add finely minced garlic and chili.

To serve: Arrange the vermicelli noodles with fresh herbs, cucumber, and roasted peanuts. For an even better bowl, add egg rolls or shredded pork skin if desired.
